Two BBQ grill recipes with salmon and peanuts
This summer we have decided to grill more often and have new BBQ grills Recipes to try. Corona gives us the time for it. We are slowly venturing back to travel. Salmon in a peanut crust on a crispy salad
The first of the BBQ grill recipes we want to test is salmon in peanut crust on a crispy salad. That sounds refreshing and easy to do at the same time. Ingredients for this grill recipe (4 servings):
- 40 ml soy sauce
- 30 g liquid honey
- 6 EL oil
- 4 salmon fillets with skin
- 1/2 red cabbage
- 400 g carrots
- 1 organic orange
- 5 tbsp apple cider vinegar
- 60 g peanuts, roasted and without salt
- 1 bunch of arugula
Mix the soy sauce, honey and 2 tablespoons of oil. Brush salmon fillets with a little marinade and chill for 15 minutes. For a picnic in the country, the salmon fillets are wrapped in cling film and are best cooled in one mobile cool box for the car *until you put them on the grill.
Clean, wash and cut the red cabbage into fine strips. Place in a bowl and knead thoroughly. Peel the carrots and grate them roughly. Wash the orange hot, pat dry and rub the peel. Then cut in half and press out. Mix the red cabbage strips, grated carrots, grated orange peel and juice, vinegar and 4 tablespoons of oil. Season with salt and pepper, chill.
Chop peanuts finely and stir into the remaining marinade. Put the salmon fillets in a grill bowl. Drizzle with the peanut marinade and cover and grill on the hot grill for about eight minutes. Clean the arugula, wash, shake dry and fold under the red cabbage salad. Arrange the salad and salmon on plates.
The second grill recipe is even easier and is also perfect for grilling outdoors or on a motorhome tour. Peanuts are perfect for preparing dips. Because: grilled dishes and dips simply belong together. With a little bread or as a companion to grilled vegetables, fish or meat, the homemade sauces are popular.
This peanut dip goes well with grilled salmon
Ingredients (4 servings):
- 1 onion
- two gloves of garlic
- 1 EL peanut oil
- 150 g ültje peanuts, roasted and salted
- 2 tbsp crunchy peanut cream
- 300 ml of coconut milk
- 1 tbsp soy sauce
- a few drops of rice vinegar
- 1 TL Sambal Oelek
Peel the onion and garlic, dice finely. Fry in a saucepan in heated peanut oil for 2-3 minutes. Chop peanuts.
Add peanuts and peanut cream, deglaze with coconut milk. Season with the remaining ingredients, cook for 2-3 minutes. Mix the creamy sauce with a hand blender, place in a small bowl and serve sprinkled with peanuts.
For one Picnic trip you simply prepare the dip and transport it in a closable glass. The fish for the grill recipe is best packed in cling film and taken with you in a cool box.
